The way we were....... Like the consumption of meat, the consumption of tea in Australia during the 19th Century was, according to Dr. Philip Muskett, 'enormously in excess of any common sense requirements, and....paralleled nowhere else in the world'.  Although Muskett insists that the ''fairer sex' was largely responsible for this extravagance, the Australian's addiction to the beverage is popularly seen as a phenomenon of the outback, where the preparation of billy tea has become part of bush mythology.  It is perhaps worth noting that until the late 1830's all tea drunk by Western societies was Chinese, for the Indian tea industry was not founded til 1834.
